Chewy Sweet Potato Waffle

  1. Cut sweet potato into small pieces, steam over medium heat for 20 minutes until soft.
  2. Add unsalted butter and sugar before mash sweet potatoes.
  3. Add tapioca starch and mix well until it becomes a non-sticky dough.
  4. Roll the dough into small balls.
  5. Brush a thin layer of oil on the baking try of the waffle maker, preheat the waffle maker before putting in the dough.
  6. Bake for 3-4 minutes until the dough is golden and crispy.

Ingredients (For about 40 balls)

 

Yellow Chewy Waffle:

Chewy Tapioca Starch 40g

Yellow sweet potato 200g

Unsalted Butter 15g

Sugar 30g

 

Purple Chewy Waffle:

Chewy Tapioca Starch 30g

Purple heart sweet potato 200g

Unsalted Butter 15g

Sugar 30g

Hot water 15ml (optional)
